Positional Summary

Prepare, portion and cook large quantities of meat, fish, fowl, gravies, vegetables, cereals, soups, fruits, bread, pastries, pies, rolls, doughnuts and other forms of food and baked goods from recipes and instructions under general supervision.

Key Position Duties
  • Cook large quantities of meat, fish, fowl, gravies, vegetables, cereals, soups, fruits and other types of food according to recipes and instructions to include, but not limited to, baking, roasting, frying, stewing, broiling, boiling, and steaming.
  • Review menus, recipes and production sheets; measure and batch ingredients; mix, mold, knead, roll, cut, weigh, proof and bake dough for bread, pastries, pies, rolls, doughnuts, and other baked goods.
  • Measure and serve individual portions of bakery products; glaze, ice, fill, and decorate cakes and pastries; prepare pie shells and fillings as needed.
  • Wash, weigh, portion, mix, batch, chop, cut, bone, trim, and otherwise prepare food stuffs for cooking as appropriate; operate and maintain food production equipment.
  • Carve portions of meat, fish, and fowl for individual servings; place prepared food on trays or dishes for storage or pick up by food service personnel.
  • Ensure all supplies, materials and equipment are available in assigned work area for proper performance of duties; report production or equipment problems to appropriate personnel; maintain accurate production records to include portions and quantities of products prepared, used, and leftover.
  • Clean working area, production utensils and production equipment to include ovens, cabinets, cooler, floors, choppers and blenders; follow appropriate sanitary procedures while cooking and cleaning.
  • Operate and maintain equipment such as mixers, cutters, ovens, doughnut machines, freezers, refrigerators, scales and other food service equipment.
  • Count, wrap, bag, stack, label and store baked products; load baked products on trays and trucks to be conveyed to kitchen or cafeteria.
  • Monitor the work of and assist in training employees in lower classifications.
  • Perform other related duties incidental to the work described herein.

Qualifications, Skills, and Competencies

Required Minimum Education and Experience:
  • Education
    • Work requires the ability to understand and follow instructions, interpret recipes, use fractions to modify proportions and mix, measure and/or prepare ingredients generally acquired through a high school education.
  • Experience
    • Work requires six months as a Production Worker Trainee or related food production experience.
  • OR ANY OTHER EQUIVALENT COMBINATION OF RELEVANT EDUCATION AND/OR EXPERIENCE.
Physical Demands
  • Ability to move throughout dining facilities,
  • Moving heavy weighted materials and equipment (up to 50 lbs)
  • Self-movement/positioning to perform light cleaning duties in high and/or low areas
  • Position self to reach materials on shelving units
  • Potential transport and stock of assigned supplies and materials
