Dishwasher (On-Call)

The Dishwasher is responsible for supplying spotless, sanitized dishes for use in the dining room, clean kitchen utensils to the cooks, for operating the dishwashing machine using appropriate supplies and procedures, and ensuring adequate supplies of dishes and utensils at all times. The Dishwasher also ensures that kitchen floors and the dishwashing area are maintained in a clean, safe and sanitary condition.

ESSENTIAL JOB FUNCTIONS / RESPONSIBILITIES:

  1. Comply with all kitchen sanitation and safety standards in accordance with applicable regulations and established protocols.
  2. Sort and rinse dirty dishes, glass, tableware and other cooking utensils and place them in racks to send through dishwashing machine.
  3. Sort and stack clean dishes; carry clean dishes to cook's line and other proper storage areas; rewash soiled dishes before delivering.
  4. Change dishwater in dishwashing machine; monitor dishwashing machine and notify manager if machine wash or rinse cycle falls below safety standard temperatures; assemble/disassemble dishwashing machine as needed.
  5. Wash pots, pans and trays by hand.
  6. Set up or break down dishwashing area.
  7. Fill/empty soak tubs with cleaning/sanitizing solutions.
  8. Responsible for cleaning and maintaining kitchen floors during and after service. Clean and roll/unroll mats; sweep/mop floors; wipe up any spills to ensure kitchen floors remain dry.
  9. Remove trash and garbage to dumpster; sweep up trash around exterior of restaurant and garbage dumpster; conduct other cleaning as needed/directed.
  10. Clean kitchen equipment and fixtures, using appropriate cleaning materials and safety gloves.
Requirements
  1. Previous restaurant or related experience preferred.
  2. High school diploma (or equivalent).
  3. Comfortable working independently and managing workload while supporting a team in a fast-paced kitchen environment.
  4. Punctuality and reliability are critical.
  5. Good verbal communication and organizational skills.
  6. Ability to read and comprehend labels on chemicals.
  7. Valid New Mexico Food Handler certification required before hire.
  8. Ability to work evenings, weekends, weekdays, and holidays required.
  9. Ability to work in an environment where the employee is frequently exposed to heat, steam, noise, and odors.
  10. Ability to stand for eight or more hours per day, sit, reach, lift, bend, kneel, stoop, climb stairs, push and pull items weighing up to 50 pounds.
  11. The position requires manual dexterity; auditory and visual skills; and the ability to follow written and oral instructions and procedures.
