Opportunity

Serve as the strategic leader driving our Food & Beverage strategy and businesses forward. Manage all aspects of the food and beverage operations within Kohler Wisconsin to meet projected financial targets, while achieving outstanding levels of creative product quality, along with high levels of guest satisfaction. Maintain an industry leading competitive edge throughout all F&B outlets and production kitchens. Drive restaurant covers through compelling social media stories, effective events and marketing, and state of the art demonstrations and interactive culinary events. Lead the Culinary leadership team in all resort special event programming. Deliver superior guest experiences through well-orchestrated front of house service, robust training programs, upselling and maintain all industry ratings and rankings. Ensure each Food & Beverage outlet has a clear service personality that is well articulated, trained and creates the corresponding atmosphere for our guests. When a restaurant has become tired and results decline make re-concept recommendations. Deliver F&B events and innovation that drives a year-round PR strategy

Scope

This position is responsible for eight food and beverage outlets, management of five direct report managers, three indirect report managers, and approximately 300-line associates.

Specific Responsibilities

Financials – completed fiscal responsibility for the food & beverage operations:

Sales generation and marketing strategy to meet planned annual revenues

Controlled costs of sales in food & beverage to approved plan percentages; maintain accurate inventory procedures for food, liquor and wine

Control of labor as a percentage of sales as designated by Financial Plan

Control of all other direct operation expenses in line with sales, at a predetermined percent of sales

Manage capital expenditure plan on an annual basis; project management to ensure cost compliance with plan

Bold Leadership and Talent development-Leader by example of Bold Leader Behaviors, holding associates accountable and growing talent though robust development.

Partner with HR on recruitment strategy to drive talent pipeline through partnerships with key culinary institutes.

Ensure associates receive proper training to produce consistent high expectations to achieve desired industry ratings.

Lead Food & Beverage team through large events such as Golf Championships/Majors, Food & Wine and other notable occasions.

Manage wine and beverage programs across the resort, optimizing inventory turns, COGS and contribution margins

Implement, promote and manage a creative cocktail and mixology program to optimize profitability in all bars and outlets

Implement, manage and optimize usage of all existing and future F&B technology for purchasing, costing and sales.

Actively participate in digital marketing programs for F&B in close collaboration with marketing department

Quality Control – standardize all food and drink preparation and presentation methods in standard operating procedures to drive consistent quality and delivery.

Safety – Ensure all investigations and corrective action occur for any safety concerns. Lead the team with regular safety training and inspections.

Sanitation – complete sanitation program through all departments to ensure all food preparation and storage is handled in the highest degree of hygienic control.

Innovation - Provide vision and leadership for culinary practice, including mentoring and developing the culinary team members and creating a culinary culture within Wisconsin.

Provide value-added thought leadership, culinary-inspired new product ideas, and prototyping on all food and beverage projects

Identify, develop and present differentiated, business building culinary intellectual properties, including long-term shifts as well as short-term trends and predictions Leads the research, development, evaluation and implementation of new venues, products, services, technology and processes to ensure company’s competitive position in anticipation of changing customer needs within the dynamic hospitality environment.

Menu Development:

Collaborate with the outlet leadership teams to develop and implement new menu (food and beverage) items or revise existing menu items/recipes to improve quality, execution, presentation, costs and sales.

Formulate ideas, concepts, and price margins on all menus (including holiday menus) with outlet Chefs and General Managers – Immigrant, Wisconsin Room, TOWL, River Wildlife, In-Room Dining, Whistling Straights, Blackwolf Run, Horse and Plow

Communicate, execute and launch new menu or new menu items resort wide.

Menu Mix Optimization – keep abreast of current and emerging trends, sales volumes, food cost, menu mix and ingredient market price to make recommendations on menu item or ingredient additions/deletions and revisions.

Assume leading role / culinary representative at F&B events, multi-platform media appearances, and industry events.

Skills/Requirements

8+ years of applicable experience at minimum a Four Star, Four-Diamond property. Associate degree in culinary arts and Bachelor’s degree in management strongly preferred.

Proven ability to manage multiple units over varying meal periods and cuisine styles.

Resort and restaurant industry experience required.

Strong background in cost management for food, beverage, labor, and other operation expenses. Command of menu structure, pricing, and formatting.

Extensive knowledge of food preparation, wine selection, and bar management.

Demonstrated skill in strategic planning.
