Position Summary:

The Director of Culinary Services is to coordinate all dietary services employees and activities to ensure the ongoing service of a nutritious and attractive quality food service program. This position hires and trains staff and provides supervision to dietary personnel, ensuring that appropriate sanitation and safety practices are followed by dietary service staff, and working with other Care Center departments to assure residents receive good customer service. Services are provided in accordance with the mission of Guardian Angels.

Job Duties:

Coordinates work of dietary staff. Assumes responsibility for total kitchen operations and handles all situations in the kitchen according to policy.

Develops standards for organization and supervision of food service.

Maintains quality services within prescribed budget.

Determines quality and quantity of food required; plan menus and controls food costs; works closely with Administrator and Nursing Department when necessary. Responsible for department budget and inventory.

Ensures federal and state compliance.

Prepares all food according to the menu in a safe, sanitary manner by insuring proper preparation, portioning, and serving of foods according to standardized recipes.

Prepares quality food products according to standardized recipes and menus in a timely manner at specified meals times.

Makes frequent inspections of all work, storage, and serving areas to determine that regulations governing food services are followed.

Maintains inventory of food and nonfood items. Insures all food in refrigerator, freezer, and dry storage are labeled and dated.

Follows departmental procedures including sanitation, safety and cleaning schedules.

Oversees proper food handling and utilization of all foods to prevent contamination, increase quality, and reduce costs.

Selects, orients, and trains new employees in department; provides counseling to staff and institutes disciplinary measures as needed; completes performance evaluations with Administrator.

Maintains appropriate documentation in resident’s medical records.

Maintain effective relationships with all staff and with residents.

Efficiently uses time to complete assigned work.

Prepares all menus.

Maintains all records: meal counts, invoices, cleaning charts, temp. charts, and staff time sheets.

Maintains required certification, attends all appropriate training.

Orders all food and supplies.

Maintains a working relationship with all vendors.

Plans and prepares food for special events.

Follows emergency procedures according to policy.

Assist in providing a dignified, respectful, resident-centered environment for residents.

Follows universal precautions, facility infection control guidelines, state and federal regulations.

Attends in-services and training sessions as required.

Uphold confidential information as required by Guardian Angels policy and procedure and as related to HIPAA.

Uphold the mission, vision, and values of Guardian Angels.

Performs all other duties as assigned.

Qualifications:

Culinary Degree, Associate degree or certification in food science, nutrition dietetics or related field preferred.

SERVSAFE certification or willing to obtain within 60 days required.

Minimum five years’ experience in the food service industry preferably in health care with three years supervisory experience required.

Knowledge of current food service standards and guidelines in accordance with state and federal regulations.

Excellent verbal and written (read, write) communication skills.

Occasional evenings, holidays and weekends may be required.
