Red Cow and Red Rabbit are elevated casual restaurants in Minnesota.

Red Cow is a 21st Century Tavern focusing on from-scratch made American fare including burgers, sandwiches, and other approachable offerings. Our beverage program is centered around fine wine, innovative craft cocktails, and craft beer.

Red Rabbit serves uncomplicated, authentic Italian cuisine in a friendly neighborhood restaurant. Our focus is on pizza served on house-made dough cooked in a wood-fire oven, pasta served in robust sauces, and fresh briny oysters. The beverage program is centered around craft cocktails inspired by Italian culture and fine wines from Italy.

Role Overview:

The Bar Director/Cocktail & Spirits Manager will play a pivotal role in our management team, working closely with the Bar Managers and Bartenders across all Red Cow and Red Rabbit brands. This role is tailored for an individual who is deeply passionate about the art of mixology, has an extensive understanding of spirits, and is driven to craft cocktail menus that set trends and captivate our guests. The ideal candidate will not only elevate our beverage offerings but also ensure operational excellence, foster team development, and achieve cost efficiency. As the creative force behind the Red Cow and Red Rabbit beverage program, the Beverage Director will embody leadership qualities that inspire, guide, and nurture leadership skills within our teams, setting a standard for excellence and innovation across our brands.

Key Responsibilities:

Product Excellence:

Lead the innovation and execution of cocktail creation and development, launching trend-setting cocktail menus regularly.

Ensure that the cocktail menus and beverage offerings are designed with the guest experience in mind, consistently exceeding guests' expectations with innovative and memorable beverages.

Develop and execute a comprehensive spirit training program to elevate the team's knowledge and expertise across both brands.

Cultivate strong relationships with distilleries, importers, and distributors to optimize buying power and innovation in our product offerings.

Regularly review and taste test beverage offerings to maintain high-quality standards across all menus. Implement feedback mechanisms to gather insights from guests and staff for continuous improvement.

Stay ahead of industry trends by conducting regular market research, attending industry events, and networking with peers to incorporate innovative practices and ingredients.

People Management:

Collaborate effectively with Bar Managers and Bartenders to uphold and exceed service standards across Red Cow and Red Rabbit locations.

Mentor Store Level Leaders, nurturing their development and leadership skills within the beverage program.

Continuously observe, evaluate, and enhance bar systems and practices.

Foster an environment of teamwork and collaboration across all Red Cow and Red Rabbit locations. Encourage open communication and shared learning among the beverage team.

Oversee the hiring and comprehensive training of new bar staff, ensuring they align with our brands' standards of excellence and hospitality.

Incorporate sustainable practices in cocktail creation and menu development, including the use of local and seasonal ingredients.

Profit Maximization:

Master inventory processes and Bevinco software for effective inventory management across all locations.

Ensure beverage menus are accurately costed to maintain budget integrity while delivering high-quality offerings.

Strategize to minimize waste comprehensively, addressing service errors, theft, and spoilage efficiently.

Develop and implement strategies to increase beverage sales and profitability, including promotional events, sales techniques, and limited-time offerings.

Utilize data analytics to monitor sales trends, inventory levels, and profit margins, making informed decisions to adjust pricing, promotions, and menu offerings as needed.

Optimize supply chain operations for the beverage program, negotiating contracts and terms with suppliers to ensure cost-effective procurement while maintaining quality.

Qualifications:

Exceptional knowledge of spirits, cocktail trends, and mixology, with a track record of innovative menu development.

Proven experience in a leadership role within a high-volume, upscale casual dining or premium bar environment.

Demonstrated leadership ability, with experience in mentoring and developing hourly team members to be confident and knowledgeable in service.

Excellent organizational, analytical, and problem-solving skills.

Strong capability in inventory management and cost control.

Resilient and adaptable, thriving in fast-paced environments and capable of managing multiple priorities.

Relocation Requirements:

Red Cow and Red Rabbit have 8 locations located in and around the metro area of Minneapolis and St. Paul, MN. We are a hands-on company that requires personal interaction and oversight of our operations. In order to guarantee growth and excellence, a qualified candidate must be located in the Minneapolis/St. Paul area. Relocation compensation will be offered to a candidate during the hiring process.

Pay: $70,000.00 - $85,000.00 per year
