Manage all aspects of the back of the house operations including sales and service, quality, cleanliness, controllable profits, labor and food costs, recruitment and retention, training, staff development. Must be willing to travel; possess reliable transportation; 24 hour availability.
Please note, this will primarily be a grave-yard shift position.
Primary Responsibility:
Responsible for the operation of the back-of-house (donut production and backroom procedures)Responsible for taking and recording temperatures of dry yeast-raised mix, water and doughs, weighing and mixing the raw materials according to recipe, rolling and cutting the dough, hand-making other yeast-raised products and placing them on screens to be placed in the proof box (if applicable)Responsibilities:
Oversee the complete back of house operations of a store (potential to run multiple stores)Train all employees in franchise policies and proceduresHandle responsibilities of other staff positions as neededRegularly review recipes and production techniquesSupervise cutters, fryers, and finishersTest equipment for proper functionTrain employees on equipment use and overseeMix yeast-raised doughForm dough on sheet cutterCut shapes and hand-make products and place on frying screesMix icingPerform other duties as assignedRequired Skills:
Excellent communications skillsAbility to see the big pictureAdept at planning, organizing, problem solving, and decision makingHigh energy self-starter with initiative, adaptability, and resourcefulnessUnderstand and manage to P&Ls and other operating statementsA valid driver's license (travel is required)Must meet insurance underwriting requirementsBenefits include:
