This is an exempt position with a starting salary of $95,000, based on skills and experience. The role requires a five-day work week, with travel to communities in North Sacramento, East Bay, and South Bay at least four days per week. Some weekend availability is required.SUMMARYIn the Director of Food and Beverage role, this person develops and oversees systems for ordering, budgeting, and staff training to enhance food service operations across multiple communities, under the direction of the SVP of Operations. This role coordinates food service activities of Carlton Senior Living communities and is responsible for achieving high-level service, budgetary and business management, and quality food. The Director collaborates with chefs, managers, and residents to create innovative dining strategies that accommodate diverse dietary needs. They maintain high standards of food preparation, sanitation, and dining room presentation while elevating the overall dining experience. The Director will be expected to conduct regular community visits to provide direction, oversee systems implementation, deliver training and support, and address any concerns regarding food quality or service.ESSENTIAL DUTIES AND RESPONSIBILITIES

Regular and predictable attendance is an essential function of the job.Creates, implements, and maintains a sophisticated ordering procedure and budgetary system for all Chefs. Estimates food and beverage costs and requisitions or purchases supplies. Negotiates pricing for supplies and food as well as other necessary items for all communities. Reviews monthly profit and loss statements and monitors budget to ensure efficient operation, and to ensure expenditures stay within budget limitations.Develops and implements systems, methodologies, policies, and procedures to standardize and elevate the culinary program. Partners with the Chefs, Dining Room Managers, Executive Directors, and residents to create strategies and innovative approaches to meet the nutritional needs, desires, and lifestyles of our residents.Develops, implements, and maintains a comprehensive kitchen and dining room training program that includes a sophisticated service experience, and the management of and oversight of the Point-of-Sale (POS) system. Creates a comprehensive Dining and Kitchen Services manual with coaching and cueing tools for staff, as well as a system for ongoing monitoring of management and staff execution.Visits all communities regularly to provide support and oversight, within a 100+ mile radius.Works with Executive Directors to maximize operational effectiveness, and budgetary success.Creates, implements, and maintains a Memory Care Culinary Program which is focused on providing the residents with a dignified, equal, and vibrant experience.Ensures communities are upholding residents’ special diets with innovative and quality options, specifically focusing on pureed diets, (with the use of food molds), gluten free diets, vegetarian diets, vegan diets, and providing appropriate low sugar options.Maintains responsibility for elevating the visual appeal of all Carlton dining rooms.Collaborates with all departments to improve the resident experience.Assists with planning and budgets for special events in partnership with Sales and Activities Managers. Confers with culinary personnel to plan special menus and related banquet activities. Creates guidelines for company special events.Leads regular Culinary and Dining Room Manager meetings and attends other department meetings as relevant to discuss the culinary department, as well as resident council meetings and food committee meetings to enhance community experience.Prepares written monthly and quarterly reports for Senior Management.Conducts quarterly Quality Assurance (QA) audits for all communities.Ensures food preparation standards and sanitation regulations and requirements are met. Ensures compliance with all federal and state regulations.Acts as a resource and problem solver for current residents, guests, family, and staff. Investigates and resolves food quality and service issues and complaints.Develops standards for equipment, food service, and cleanliness of Kitchen, Café, AL, and MC dining rooms. Ensures appropriate employees (both dining room and kitchen) are Serve Safe Certified (or Train the Trainer).Assists with recruitment and retention of Kitchen and Dining teams in all communities to include management and staff.Leads the onboarding of culinary managers.Complies with company policies and procedures and State Regulations, and consults with SVP of Operations to ensure compliance with Title 22 if questions arise.Dresses appropriately per standards outlined in the Company’s Employee Handbook.Observes Residents’ Rights at all times, as posted within the facility, to include any updates thereto.Mandated reporting – if you suspect any verbal, physical, emotional, financial, or neglectful treatment toward a resident or staff member, report it to your supervisor immediately.In Emergencies, assists residents according to the Emergency Plan of the facility.QUALIFICATIONSBachelor's degree (B.A.) from four-year college or university; or one to two years related experience and/or training; or equivalent combination of education and experience.Direct experience working in a food and beverage regional, consultant, or supervisory role, in such industries as restaurant, hotel/resort, cruise ship, private/country club, casino, corporate dining; or senior living if in a high culinary and/or hospitality position.Comprehensive computer skills and knowledge of Microsoft Office, specifically working competency with Microsoft Excel. Ability to create comprehensive excel spreadsheets with business analytics. Ability to design metrics pertaining to elevating the success of the department.Reasonable expectations associated with this position related to mathematical, technical, and reasoning skills to perform the essential functions of the position.Bi-lingual preferred.COMMUNICATION SKILLSAbility to write routine reports and correspondence.Ability to communicate with employees and residents and speak effectively before groups of employees of the organization.Interact with our customers – including residents, family members, and all staff members – according to the concepts identified by the Company and its commitments.Proficient in reading and interpreting documents in English and understanding various forms of communication, including instructions, emails, and notices.Effective conflict resolution skills to address conflicts, concerns, and issues in a diplomatic and constructive manner, fostering a positive work environment and team cohesion.Must be able to use technology, such as Company-provided phones, laptops, and tablets, to communicate with staff.Remain professional and respectful interactions with our customers – including residents, family members, and all staff members.CERTIFICATES, LICENSES, REGISTRATIONSMust be authorized to work in the United States of America and provide sufficient work authorization documentation(s), as requested.Department of Justice and FBI fingerprint clearance must be completed prior to working in the community (obtained through the community).Health screening/Physical and negative tuberculosis test must be less than six (6) months old (obtained through the community).Carlton Senior Living’s Commitment to Pay TransparencyCompensation may vary outside of this range depending on a number of factors, including a candidate’s qualifications, skills, competencies and experience, and location.
