What will be your daily pursuit?:Pursuit’s Alaska Collection is seeking a Food & Beverage Operations Manager. As the F&B Operations Manager, your daily pursuit will be to ensure a stand-out dining experience for our guests. You will provide key leadership and direction in all areas of The Alaska Collection (TAC) F&B Front-of-House (FOH) programs including design, implementation, training, and support. This job description summarizes at a high-level what the F&B Operations Manager does, but no document can anticipate every single task, issue, or project that could arise. This is an Extended Seasonal Full Time Role (10-month) – January through October What will you do in this job?:F&B PROGRAM DESIGN & DEVELOPMENT Keep up with F&B trends and our competitive set in Alaska; make recommendations & changes as necessary. Foster partnerships with local & regional vendors including brewers, distillers, distributors, etc; including preparation of seasonal estimated usages, procurement / pricing agreements, and pre-buys. Assist with development & implementation of Alaskan-inspired drink programs designed to wow guests and provide growth to each unique outlet. Assist with development & implementation of sales goals, contests, and incentive programs to increase F&B revenue. IMPLEMENTATION & TRAINING Assist with development, coordination, and on-going implementation of F&B training programs for seasonal TAC F&B staff including operations and service standards, systems, standard operating procedures, and responsible alcohol service. Collaborate on POS systems development, screen layout, and programming through Simphony. Will coordinate training & ramp-up for all seasonal staff & outlets for inventory management. Ensure TAC F&B controls are met by maintaining effective cost & portion control. Communicate key metrics to TAC F&B Director and TAC F&B operations teams for review & approval, including weekly meetings with TAC F&B location teams. F&B FOH SUPPORT Act as shift / location / outlet manager throughout TAC F&B as necessary. Handle guest and staff concerns in a professional manner; take fast & appropriate action to solve problems. Work collaboratively with TAC F&B teams, including monthly inventories. Support all TAC F&B outlets with product ordering guides & order management. Manage TAC F&B product inventories using F&B product inventory management system Craftable, which may include but is not limited to:On-board new vendors & manage invoices for A/P, including vendor summary statement audits. Build product & menu lists. Coordinate monthly product inventories with TAC F&B operations teams, including regular monitoring of inventory in & out. Review & audit invoices with location managers to ensure inventory accuracy, as well as price variances from prior invoice pricing and / or contracted price. Communicate with vendors for recurring & one-off ordering, and ensures accuracy in tracking invoices. Follow federal, state, and company policies & regulations for serving alcoholic beverages in a responsible manner. Enforce all company policies & regulations to ensure good safety practices of staff & guests throughout department. Always have the guest & staff experience in mind. Facilitate a positive environment and “yes” culture. Assist with other responsibilities as requested. What skills and experience do you need for this job?:IDEAL EXPERIENCE: Degree in Restaurant / Hospitality Management, or a related field, preferred. 2+ years restaurant, café, or bar management experience – high-volume, seasonal dining preferred. Proven experience in serving / bartending. Hospitality POS experience is desirable. Experience with Microsoft Office – strong Excel skills are a plus. Experience with Craftable inventory management system & Simphony / Micros systems is helpful, but not required. Must be pleasant, helpful, friendly, outgoing, enthusiastic, and courteous in dealing with guests & staff; work ethic and commitment to the team & guest are key. Possess in-depth working knowledge of service standards, as well as strong analytical and business communication skills. Proficient computer skills utilizing a variety of computer applications and software. Effective knowledge of food, liquor, and labor cost controls. Efficient knowledge in kitchen operations, cooking, and timing is helpful. Must be 18 years of age or older. Must be able to work in the United States. Must possess valid US driver’s license. The F&B Operations Manager provides coverage throughout all TAC locations during the summer operating season, and should maintain a willingness to work on-site for approximately 21 summer weeks if required. The range between TAC properties from the northernmost outlet (Denali) to the southernmost (Seward) is approximately a 7-hour drive; it is common for this role to provide on-site support at various times for all TAC operations within this range. Off-season officing is available in Anchorage, AK. What will your work environment be like?:Beautiful.
