The Utah Department of Corrections is looking for these and other leadership attributes,as well as a motivated,hardworking leader with experience as either an executive/lead chef,event concessions director/manager,or retail store director/manager in the food service industry. We are looking to hire an exceptional leader to the exciting new Employee Dining Manager (Program Specialist II) position at the Utah State Correctional Facility in Salt Lake City. Under the direction of support services leadership,the Employee Dining Manager will fully operate the prison employee dining retail store and its advanced preparation kitchen. The Employee Dining Manager will also supervise and operate a work program employing offenders that may include culinary arts graduates. This is a senior level position requiring expert level knowledge of food service operations and retail store management. The Employee Dining Manager will develop and maintain cooperative relationships with all UDC divisions,as well as other state,local and private stakeholders. This job is NOT public safety certified and does not require peace officer status or certification. Principal Duties The Employee Dining Manager will: Directly manage an Employee Dining Assistant (Warehouse Specialist) and a work program for inmates at a large prison facility. This includes hiring,determining workload,delegating assignments,training,monitoring and evaluating performance and initiating corrective or disciplinary actions. The Employee Dining Manager is responsible for managing menu development,food service budgets,retail store ordering/inventory,point of sale processing,policies and operational requirements. This includes the responsibility to ensure operations follow food safety regulations,laws,requirements and practices. Adherence to all established correctional food service standards is required. Collaborates with subordinate personnel,purchasing staff,vendors,and other areas/agencies to ensure an adequate supply of food,materials and equipment is available to maintain Employee Dining operations. Ensure proper maintenance of all food service equipment and employee dining areas. Plans and organizes food service areas/operations for maximum use and efficiency. Identifies problems or potential problem areas and collaborates with stakeholders to implement solutions. Strict adherence to safety and security guidelines,policies and practices while working in and around a correctional institution environment. Other duties as assigned. Ideal Candidate The ideal candidate for this position has the following: At least 5 years of experience managing subordinate personnel in a food service operation as either an executive/lead chef,event concessions director/manager,or retail store director/manager in the food service industry. Experience adhering to OSHA workplace safety standards and health department food safety regulations,standards,and laws. Extensive knowledge and experience either as an executive/lead chef,event concessions director/manager,or retail store director/manager in food service. Excellent verbal and written communication skills. Leadership experience and ability. Extensive experience with food service equipment,computer/office equipment and using software,including word processing,spreadsheets,and inventory software.
