The Cook is responsible for food preparations that meet or exceed hospitality and service standards of this community. Prepare all foods to meet quantity, quality, and deadline requirements. As part of an interdependent team of skilled and caring people, the Cook must act in accordance with current federal, state and local standards, guidelines, and regulations that govern Penick Village, to ensure that the highest quality of resident care and safety is maintained at all times.
Job Duties and Responsibilities:
Prepare food items using standardized recipes.
Determine food and supplies needed and coordinate meal production with serving hours.
Prepare all special dietary needs as directed by the Resident menus.
Monitor all food items to see that as least the minimum guidelines for temperature, taste, presentation, and quality are upheld at all times.
Maintain or exceed standards of appearance, cleanliness, hygiene, and health standards.
Follow daily and weekly cleaning schedules.
Assist with orientation and training of new kitchen employees.
Practice all safety and loss prevention procedures.
Attend all in-services as required.
Responsible for following all local, state, and federal policies regarding food handling.
Assist in the portioning and serving of food items before, during, and after the meal periods.
Assist with proper documentation of temperature logs and taste panel forms.
Ensure ingredients and final products are fresh
Follow recipes, including measuring, weighing and mixing ingredients
Bake, grill, steam and boil meats, vegetables, fish, poultry and other foods
Present, garnish and arrange final dishes
Occasionally serve food
Maintain a clean and safe work area, including handling utensils, equipment and dishes
Handle and store ingredients and food
Maintain food safety and sanitation standards
Clean and sanitize work areas, equipment and utensils
Execute opening and closing procedures
Set up workstations with required ingredients and equipment
Check the quality and freshness of ingredients
Monitor station inventory levels
