The General Manager is responsible for ensuring proper training and supervision of all personnel to create FUN moments for our guests. To deliver prompt, courteous service in a manner that complies with Downtown Flavortown standards and company policies and procedures. Responsible for varied duties involved in the oversight of the overall operation of the restaurant, private dining, bowling, arcade & including maintaining the Company’s Culture & Brand Standards, always presenting a professional image, coaching, counseling, and developing Team Members, maximizing sales and profitability, controlling expenses, meeting budgetary constraints, handling Guest complaints, and ensuring sanitation, safety, and food quality. Contributes to the overall success and profitability of the company and delivers on the Company’s Brand Promises.
Duties & Responsibilities:
Control the day-to-day operations of the venue within the policies and guidelines set forth by the company, including the insurance of appropriate levels of staffing.
Maintain a professional company image, including restaurant and bar cleanliness, proper uniforms and appearance standards.
Control Profit & Loss by following cash control/security procedures, maintaining inventory, managing labor, reviewing financial reports and taking appropriate actions to include maintaining appropriate stock of liquor, beer and other bar or restaurant products.
Maintain cost of goods sold, nightly comps, nightly recap reports and safe audits by overseeing inventory counts.
Respond to customer service needs to provide the highest standards of service.
Assist Director of Food & Beverage in management of third-party vendor contracts.
Ensure all management teams are staffed to deliver the day for our guests.
Ensure Pre & Post shift meetings for each department are held daily when business allows.
Monitor guest satisfaction, MOS audits and food quality and safety are held to our highest standards.
Assist when needed to complete financial and personnel/payroll related administrative duties accurately, on time and in accordance with company policies.
Recruit, interview and hire supervisory and hourly team members; train, supervise and motivate; take disciplinary action and terminate supervisory and hourly team members when necessary.
MOS (Moments of Service) Training for all employees. Train employees, as assigned, in an ongoing basis.
Ensure a safe working and guest environment to reduce the risk of injury and accidents.
Ensure positive discipline is embraced by all management team members.
Manage all third-party entertainment vendors, as well as Entertainment Director, if applicable.
Assists with ensuring the daily deposits have been deposited, safe counts conducted, and venue's cash is always secured.
Hold weekly leadership meetings with direct reports.
Administrative responsibilities:

o Monthly volume forecast
o Weekly volume forecast
o Weekly schedule
o Staffing requirements, hiring and separations
o Weekly cover forecast
o Productivity forecast
o Bar controls and procedures
o Beverage cost
o Beverage requisitioning
o Food requisitioning
o Assist in end-of-month inventory
o Bar and dining room security
o Weekly and 90-day sales forecast
o Correlation of monthly P&L with budget
o Assist Director of DTFT in yearly revenue and labor budget
o Capital budget for outlets every year
o Assist in developing marketing plan for outlets
o Control labor cost through time edits on daily basis
o Hiring of staff to maintain adequate staff levels
o Reduce staff turnovers in each department
o Develop high potential associates for promotion
Know and adhere to all company policies and procedures.
Know emergency procedures (including CPR) and work to prevent accidents.
Be familiar with and enforce all policies related to liquor liability laws. Specifically:
o Dramshop Theory - Prohibiting sale of liquor to intoxicated guests.
o Prohibiting sale of liquor to minors.
Perform any and or all other duties assigned and/or required by management.
Constantly perform positive up-selling techniques with service staff.
Expedite table turnover strategies with table resetting.
Implement sales promotions and merchandising programs.
Be familiar with all beverage-related procedures and equipment and assist the cashier when needed.

Requirements:
High School Diploma or GED; College degree preferred.
Must have 3-5 years leadership experience in a fast-paced hospitality full-service food and beverage environment and have proven ability to thrive in such environment.
Must be relocatable.
Good people management skills, communication and listening skills.
Serve Safe Certification required.
TABC (Tennessee Alcoholic Beverage Commission) certification is required.
Proven ability to lead a team and communicate efficiently, both verbally and in writing.
Must be flexible and adaptable to change.
Demonstrated time management and organizational skills.
Must be internally motivated and detail oriented and have a passion for teaching others.
Exceptional time management and organization skills.
Ability to work evenings, weekends and holidays.
