Job Description
Check out our campus at www.VisitFranklinYard.com! Franklin Yard is a destination entertainment complex in Columbia, IL, just 10 minutes outside of St. Louis. Our beautiful campus consists of four business units: Main Street Abbey wedding and event venue, the boutique Principal Hotel, Graphite Fine Dining and Home Court Sports Bar; all transformed from meticulous renovation of the former Catholic Church and School that occupied this space from more than 100 years. Main Street Abbey is going into it’s seventh year in operations and hosts more than 90 weddings annually. The Principal Hotel just celebrated it’s Grand Opening in August. Graphite Fine Dining is anticipated to open by November this year and Home Court will be open by next Spring.
We are looking to hire a commendable executive chef to open our kitchen to begin operations in Graphite Fine Dining as well as cater the Main Street Abbey weddings this fall; followed by opening Home Court early 2025. Graphite will have 140 seats, indoor dining, enclosed four season dining room and outdoor patio. Main Street Abbey has caterings under contract and will be catering full time by next Spring Wedding Season. Home Court will have 350+ seats and plenty of entertainment including: show kitchen, concert stage, jumbo TV, virtual golf suites, gaming, outdoor patio and much more.
Our Executive Chef will work with campus General Manager, restaurant managers and kitchen managers/sous chefs to ensure smooth and profitable operation of all business units. Chef will be responsible for writing and costing menus; procuring, training and retaining talented chefs, cooks and kitchen staff; as well as ordering, reporting and cost controls.
The executive maintains a cooperative relationship with team members, optimizes staff productivity, and serves as a replacement in team members' absence. You will train staff to use new recipes, cooking techniques and equipment, and oversee cooks performing food preparation. You will oversee the delivery of food supplies, prepare special dishes, and supervise overall kitchen operations during dinner service.
To ensure success you will ensure your team delivers high-quality, cost-effective dishes promptly. Top candidates are creative, service-oriented, level-headed and experienced with openings and financial statements and reporting.
This is a full-time salary exempt position with a full benefits package. Salary will start at $80k, and increase to $100K when Home Court opens as well as a Quarterly Bonus plan worth up to $25k annually. This position will be heavily weighted to supervisory and administrative tasks but you will still have plenty of time in the kitchen creating menus, training chefs to grow their culinary talent and ensuring EXCELLENT quality of food.
