SUBJECT: Steward Supervisor

EFFECTIVE DATE: May 3, 2021

POSITION SUMMARY:

The Steward Supervisor is responsible for the flow of stewarding activity in the kitchen, dining area and bars, including hiring, training and evaluating dish, pot and cleaning staff and coordinating sanitary maintenance of physical plant, service wares and equipment in all restaurants, kitchens and bars. Ability to work the three different shifts - day, swing, graves - highly desirable. Over all three food & beverage outlets - Infinity, Den, Aqua.

TASKS:

  1. Recruits, interviews, hires, develops, appraises and coaches personnel for improvement as appropriate.
  2. Orients and trains stewarding personnel in property and department policies and procedures.
  3. Supervises, coordinates and participates in the activities of stewards and other kitchen personnel engaged in maintaining sanitation and safety standards.
  4. Maintains an open and welcoming atmosphere that promotes skill enhancement.
  5. Completes scheduling for all stewards to reflect proper budgeted FTE’s for each outlet.
  6. Holds crewmembers accountable for standards which have been set by the department.
  7. Maintains inventory levels of all china, glass, flatware, chemicals and supplies associated with department needs.
  8. Estimates supply consumption and ordering of cleaning supplies.
  9. Monitors removal of all trash from kitchens to the appropriate receptacles.
  10. Maintains clean and safe conditions around dumpster area as well as the area around the grease receptacle.
  11. Coordinates hood cleaning in all venues.
  12. Steam cleans and shampoos carpeted areas and furniture on a routine basis.
  13. Provides ideas and suggestions for new products, services, technology and processes.
  14. Utilizes staff to assist in the set up and breakdown of special events around the property.
  15. Assists in implementing ongoing training programs for dishwashing, maintenance, sanitation and safety.
  16. Keeps up-to-date with knowledge of (and use of) chemicals and electrical equipment used in the department.
  17. Trains all subordinates on all MSDS sheets, updates and manuals.
  18. Oversees cleanliness, service and productivity standards for all areas on a daily basis and coordinates training programs to achieve standards.
  19. Ensures a safe work environment for all crewmembers through compliance with established guidelines.
  20. Identifies and takes action to address safety hazards and reports such to Risk Management.
  21. Present during high volume shifts to include nights, weekends and holidays.
  22. Performs other duties as assigned to support the efficient operation of the department and property.

EDUCATION OR SKILLS REQUIRED:

  1. High school diploma or equivalent.
  2. Minimum of 5 years as a Steward Supervisor in a similar resort or casino setting.
  3. Strong computer skills with ability to learn and operate requisition system.
  4. Strong math skills.
  5. Excellent organizational skills.

LICENSES/PERMITS REQUIRED: Manager Serv Safe certification.

PHYSICAL REQUIREMENTS

  1. Stand and exert well-paced mobility for periods up to four hours in length.
  2. Lift pots, pans, etc., up to 40 pounds in weight.
