Camp Lucy is searching for a talented, energetic, and dedicated Pastry Chef to join our team and to spearhead our bakery operations. We are looking for a highly motivated pastry chef who can help us build the brand, develop others, and deliver results. The ideal candidate is passionate about food and hospitality and dedicated to ensuring that only the highest-quality offerings are served to our guests.

Key Responsibilities  

  • -Work with executive chef on seasonal menu ideas and grow a new program.
  • -Manage Pastry department for 3 services at Tillie's Restaurant, weddings and banquet events.
  • -Hire, train, mentor, and manage pastry personnel.
  • -Responsibilities will encompass all elements of working with the chef to create seasonal dishes, execute a dessert menu for private dining events, afternoon tea, the bar and main dining room.
  • -Develop new items and maintain systems of a great functioning team
  • Preparing a wide variety of high-quality goods such as cakes, cookies, pies, bread etc. following traditional and modern recipes
  • Wedding cake experience would be a plus. 
  • Consistently checks market for new ideas, cooking techniques and products.
  • Decorating pastries using different icings, toppings etc. to ensure the presentation will be beautiful and exciting.
  • Directly Responsible for all culinary operations in pastry area: Ordering, Scheduling and approval, Production and quality of product
  • Maintain a lean and orderly cooking station and adhere to health and safety standards. We want someone that takes pride in their work and their workspace!

Qualifications

  • Able to stand for long periods of time.
  • Ability to lift and move product weighing 50+ pounds.
  • Pastry related education is preferred but not required.
  • Culinary school is not a must, but a plus!
  • Must maintain current Texas Food Handler certification.
  • Ability to prioritize, organize, delegate work and follow through.
  • Previous experience in the culinary field required.

Experience:

  • Previous managerial experience highly preferred
  • Prior degree in Baking and/or Pastry from an accredited culinary university preferred.
