DESCRIPTION:
Renowned Michelin restaurant is seeking extraordinary candidates for the Executive Pastry Chef position. As such, this person will oversee a team of 5 and will report to the groups Corporate Pastry Chef. Strong tenures in Michelin-rated organizations are required. If you do not have at least 2-3 years of recent one/two/three Michelin-rated experience, you will unfortunately not be considered for this position.
Relocation assistance is offered, and we will consider H1B visa sponsorship as well.
Job Duties include, but are not limited to:
- Oversight of all pastry production, planning, and recipe development.
- Leadership of the pastry department through each shift, ensuring consistent execution of pastry offerings and timely flow of service.
- Develop all recipes, ensuring all ingredients meet our expectations of quality and that all executed items meet our aesthetic.
- Continuously provide leadership and guidance to all pastry staff
- Develop strong relationships with other members of leadership within the company.
- Educate dining room service staff on all aspects of pastry offerings through tastings and staff presentation.
- Ensure all menu changes are updated and articulated to both FOH/BOH staff prior to service.
- Maintain effective & timely communication to all BOH/FOH and hourly members.
- Maintain positive working relationship with BOH & Dining Room leaders and staff.
- Ensure the team appropriately stocks and maintains sufficient levels of food products at line stations during service period.
- Accountable to ordering and maintaining the appropriate amount and quality of product in house.
- Assists in food prep assignments and/or cooking during peak periods as needed.
- Ensure that the kitchen is kept clean, safe, and up to all 100% health code standards.
- Maintain and properly use all kitchen equipment.
- Ensure all team members are appropriately trained to execute station properly.
- Provide continuous training and leadership to develop and grow BOH team members.
- Ensure that the payroll process is completed successfully and correctly according to the standard procedure.
- Complete all assigned administrative requirements accurately and on time.
- In conjunction with the BOH leadership team, accountable to meeting or exceeding budgeted Food Cost.
REQUIREMENTS:
- Culinary Degree
- Experience in a similar role in a fine dining setting.
- Must be able to work independently and trouble shoot.
- Must be able to lead a small to medium team from prep to execution.
- Must have knowledge of numerous pastry styles and well versed in modern and traditional techniques.
- Must be able to maintain inventory, cost out dishes and track overall usage and waste of goods.
- Food Handlers certification
