Position Overview: We are seeking a talented Beverage Director to join our team and elevate our beverage program to new heights. This individual will oversee all beverage operations, including beverage selection, ordering, pricing, inventory, cellar management, and bar setup/execution for all areas of the Club including three a la carte dining venues (adult casual, elegant dinner only, and high-volume family casual), a pool canteen, golf canteen, private parties, and club functions. This role requires a minimum of 5 years of beverage management or similar experience in upscale dining, fine hotels/resorts, or private clubs of similar caliber. The ideal candidate will have a passion for excellence and a vision for innovation. The Beverage Director will be professional, polished, and highly visible with the Club’s membership and will play an active role in the dining rooms as the Club’s Sommelier. Reporting Relationships: Reports directly to the Food & Beverage Director. Collaborates with all food and beverage department managers to ensure each venue’s beverage offering is appropriately positioned, and beverage service standards are consistently maintained throughout the organization. Areas of Responsibility: Develop and Roll Out Seasonal Beverage Menus: Create error-free menus with competitive yet cost-effective pricing. Ensure menus are unique to each outlet, reflecting the brand and vision of each space. Develop, research, and train the team on seasonal cocktails. Periodically meet with vendors and attend industry events to stay abreast of new trends. Club and Private Events: Plan and execute a series of beverage events throughout the year, including wine chats/tastings, beer/wine dinners, and larger beverage-focused Club Functions. Develop beverage programs for holiday functions and other large Club events. Collaborate with banquet managers and bartenders to ensure accurate requisitions for events and accurate billing of event hosts. Highly Visible to Membership: As sommelier, be present on the floor on certain nights. Maintain a presence in all outlets and events to accurately gauge performance. Bartender Training and Development: Establish and enforce high standards for bar cleanliness and member service. Train staff on cocktail production, speed, and accuracy. Enhance staff knowledge of wine, beer, and spirits. Management Training and Development: Provide periodic education on cocktails, beer, and wine to culinary, dining and banquet managers. Ensure managers have the knowledge necessary to train their service and bar teams. Write and Meet the Beverage Budget: Collaborate with Department Heads to achieve labor and sales goals. Ensure the Beverage Department has the necessary tools for success. Build and price menus to achieve a budgeted beverage cost. Beverage Storeroom and Cellar Maintenance: Work closely with the Purchasing team to keep the Beverage Storeroom, Beer Cooler, and Wine Cellar clean and organized. Assist in monthly inventory counts to ensure accurate beverage costs. Essential Duties and Responsibilities: Administrative: Attend weekly food and beverage meetings and communicate effectively with other departments. Develop annual department operating and capital budgets. Manage within approved budgets throughout the fiscal year. Complete monthly variance analysis and sales reports. Keep Club’s beverage licenses current in coordination with the CFO. Member Relations: Welcome new club members; “meet and greet” all club members as practical during their visits to the club. Demonstrate appropriate urgency when responding to member criticism, suggestions, and praise. Create and maintain a professional, respectful, and positive employee work culture. Maintain a highly visible and engaging presence with the membership and their guests, especially during peak meal periods and at major club events. Operations: Conduct daily routine checks of all bar locations to ensure proper setup, cleanliness, and service. Provide new hire orientation, initial and continual training to all beverage personnel. Produce and update beverage staff training manuals and programs. Ensure bar personnel are trained and certified in the responsible service of alcohol (TIPS). Create beverage promotions as determined by the Club. Oversee the Club-wide wine program, including selection, ordering, menu consistency, maintenance of the wine cellar, staff training, wine promotions, and execution of wine dinners, tastings, and other special wine events (at least 1-2 per month). Actively involved in a la carte dining areas to ensure the highest level of member satisfaction regarding wine selection and questions. Work major holidays as scheduled and maintain a visible presence in front of the membership during these events to assist in selling and promoting the wine program. Submit articles about the club’s wine program and events for the Club's monthly bulletin and website. Forecast seasonal and annual needs, including staffing, materials, services, and events. Effectively communicate with all members of Beverage staff, fellow department heads, supervisor(s), members, vendors, and the General Manager. Maintain all beverage-related equipment, including the wine cellar, beer kegs and line cleaning, coolers, and storage areas. Maintain proper safety standards, adherence to safety policies, updating MSDS files, and applicable Health Department rules. Uphold the mission, policies, and procedures of the Chevy Chase Club, including the Employee Handbook. Always act in the best interests of the Club. Keep current with industry standards and practices. Assume responsibilities of Manager on Duty (MOD) when scheduled. Perform any other duties as assigned. Qualifications: To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. Certificates, Licenses, Registrations: Certified Sommelier or WSET III preferred, but not required.
