As we launch a new lunch service, we're excited to introduce a menu focused on Italian and American sandwiches, Sicilian-style pizza, fresh salads, and pastas. ### **Job Summary:**
We are seeking a skilled and passionate **Overnight Bread Baker** to join our team to work overnight hours of 10pm-6am / 5 days a week Wed-Sundays. Set days off of Mon/Tues. The ideal candidate will have experience in artisanal bread production, including mixing, shaping, proofing, and baking a variety of breads. This role requires working independently during overnight hours to ensure fresh, high-quality baked goods are ready for the morning.
### **Responsibilities:**
- Prepare, mix, and shape various types of bread dough, including sourdough, baguettes, whole grain, and specialty loaves.
- Operate and maintain baking equipment, including mixers, ovens, proofers, and dough dividers.
- Monitor proofing times and temperatures to ensure consistency and quality.
- Bake bread according to recipes and company standards.
- Ensure all products meet quality and presentation standards before packaging or display.
- Maintain a clean and organized work environment, following food safety and sanitation guidelines.
- Manage ingredient inventory and assist in ordering supplies as needed.
- Troubleshoot baking issues and adjust processes as necessary.
- Work efficiently to complete production on time for store opening.
### **Qualifications:**
- Previous experience in bread baking, preferably in a commercial or artisanal bakery.
- Knowledge of fermentation techniques, hydration levels, and dough handling.
- Ability to work independently and efficiently during overnight hours.
- Strong attention to detail and consistency in baking processes.
- Understanding of food safety and sanitation standards.
- Physical ability to stand for extended periods, lift up to 50 lbs, and work in a hot environment.
- Passion for high-quality baked goods and craftsmanship.
**Qualifications:**
- Previous experience as a baker in a restaurant or bakery setting.
- Strong knowledge of bread, pastry, and pizza dough production.
- Ability to work efficiently in a fast-paced environment.
- Team player with excellent communication skills.
- Commitment to maintaining high standards of quality and consistency.
- Food handler’s certification or ability to obtain one upon hiring.
- **Organizational Skills:** Strong organizational abilities to manage time, prioritize tasks, and handle multiple projects simultaneously.
- **Attention to Detail:** Precision and meticulousness in following recipes and maintaining consistent quality.

- **Flexibility and Adaptability:** Ability to adapt to changing needs, schedules, and duties as required in a busy restaurant setting.
**Physical Requirements:**
- Ability to stand and work for extended periods (up to 8-10 hours) in a hot, fast-paced environment.
- Capable of lifting and carrying up to 50 pounds regularly, such as bags of flour, dough, and other baking supplies.
- Manual dexterity to handle and work with bakery equipment and tools safely.
- Ability to work early mornings or late nights, depending on production needs.
- Must be able to bend, stoop, and reach to perform daily tasks.

- Fast-paced kitchen environment with exposure to heat, cold, and humidity.
