Sets up and breaks down dishwashing machine, including arms, screens, and baskets. Cleans and polishes machine thoroughly including removing and paper and hosing down interior. Checks machine to be sure it is operating correctly and reports any defects immediately.
Washes and stores all dishes in proper places, trays, utensils, cups, and small equipment of the kitchen. Check water temperature during dishwashing operations to ensure proper temperature.
Remove trash from dish room and kitchen area placing in dumpster. Cleans and sanitizes garbage cans and keep clean liners in cans at all times. CLEAN UP ANY SPILLS DURING DUMPING OF TRASH BOTH INSIDE AND OUT BY THE DUMPSTERS.
Clean and keep neat dish room area including detergent storage area.
Keep all equipment clean, polished and neatly stored.
Wash pots by hand using prescribed amounts of soap and disinfectant. Ensure that all food, grease and residue is removed. Change water as needed for best results. Check completed work for compliance with standards.
Ensure items are air dried before storing. Store in a neat fashion and rotate stock so all items get used regularly.
Keep pot and pans storage rack, surrounding floor and walls clean at all times.
Exercise some initiative in helping keep area clean, trash off the floors and walk ways clear.
Sweep and mop all floors.
Pull and wash all floor mats including the front and back cooking lines.
Keep dumpsters clean if needed spray off the dumpsters and area around the dumpsters.
Wash dock area and keep walk-ins clean of any debris.
Follow departmental rules to ensure safety, cleanliness and guest satisfaction.
Responsible for wearing proper uniform and name tag.
A hat or hairnet is required at all times.Hair must be pulled back not hanging down in face or front.
Assure smooth transition during shift change. Remain on duty until relief is present and acknowledges that they are ready to take over.
When time permits assist in prepping food in accordance and supervision of the Sous Chef or Training Supervisor.
Ability to step in and help if needed with bussing of tables or helping with bring dirty dishes back to the dish room.
Perform other duties as assigned.
