HEAD COOK/SUPERVISOR OF FOOD SERVICES JOB DESCRIPTION As Supervisor of the Food Services Program, completes all required National School Lunch Program reports. Orders supplies and maintains records for food requisitions, and completes all DPI records. Checks food shipments into the school, signing invoices after each order has been verified. Determines the quantities of each food to be prepared daily according to a planned menu using tested and uniform recipes. Serves the proper serving sizes to meet the necessary requirements with regard to the ages of those served per production sheets. Records all food requisitions from the storeroom, and records all meals served as required by state standards. Supervises, instructs, and assists kitchen personnel in the safe, proper, and efficient use of all kitchen equipment, as well as with food preparation, daily cleaning of all kitchen equipment, and the washing/sterilizing of all dishes, silverware, and utensils according to DPI requirements. Maintains a neat and orderly kitchen with the highest standards of safety, cleanliness, and security. Oversees the locking of the storeroom, freezer, and refrigerator, and maintaining correct monthly inventory. Calls in orders of all necessary supplies to approved vendors. Complies with all Federal, state and local laws and regulations for the maintenance, repair and operation of equipment and machines [OSHA]. Complies with all Federal, state and local laws and regulations for the storage, use and disposal of trash, rubbish, waste and hazardous material [OSHA]. Other duties as assigned by the Principal.
