Cobble Hill Health Center is a not-for-profit long- and short-term care facility providing services to the disabled and elderly for over 40 years. The Food Service Manager plays an integral role in helping us to achieve our vision: to consistently exceed expectations and set the standard for excellence in residential and community care.
As the Food Service Manager, you will be responsible for managing the operations for the evening shift. This primarily includes ensuring dietary aides are completing tasks, cooks are following the timeline set for meal completion, and evening meals are prepared in accordance with current applicable federal, state, and local standards, guidelines and regulations with our established policies and procedures. Reporting into the Director of Dietary, you'll consult with the cooks and cook helpers to ensure that meals are prepared according to recipes, in a timely manner, and will provide input on menu planning and recipes.

Full-Time (5 days/weekly)
Hours:
12pm-8pm + rotating weekends

Supervises kitchen operations and meal preps in accordance with the planned menu and standardized recipes.Delegates responsibilities to the cook/Cook's helper regarding meal preparation.Consults with Chef, Director, and others on the team to ensure proper tasks are being completed for food preparation, resident requests, accuracy of tray items, compliance with medical diagnoses, menu changes, etc.Tests prepared food for temperature, appearance and palatability.Attends and participates in managers' meetings.Facilitates in-service trainings.Collects and records all relevant data, such as temperatures, special devices, etc.Ensures that the team follows safety regulations as well as maintaining clean storage areas and that proper food handling equipment techniques are used.Performs other duties as assigned by Chef or Food Service Director to ensure proper care of residents and efficient operation of the department.Assumes responsibility and accountability in the absence of the Chef and Sous Chef Chef.What you offer:
Must have worked with a Chef as a cook for at least (1) year in an accredited institution.Food Handlers certification required. ServSafe certification preferred, but not required.Knowledge of operating equipment used in food preparation.Must be able to read, understand, and speak fluent English.Ability to follow recipes and production sheets and make calculations when adjusting recipes and menu portions.Knowledge of therapeutic diets, portion control, and dietary practices and procedures.Proven leadership ability and willingness to work harmoniously with others.
