Job Description Summary

As the Director of Food & Beverage, you are responsible for leading the food and beverage facilities to include the Restaurant Outlet, Royal Lanai, In-Room Dining, Banquet Outlets, Culinary & Beverage Outlets. You will ensure the highest level of guest service by overseeing all aspects of service and service staff during operation hours, while working in a clean and safe environment, and meeting all financial goals throughout all FB Outlets. The ideal candidate should have a keen eye for detail, a successful track record in managing multiple outlets, and a passion for Food & Beverage.

Principle Duties and Responsibilities (Essential Functions) include:

Provide leadership and guidance to the Food & Beverage team, setting clear goals and objectives, and facilitating training programs.

Manage inventory, purchasing, and department budget to ensure compliance with financial guidelines.

Responsible for short-term and long-term planning of all outlets including Restaurant, Bar, In-Room Dining, Banquets & Culinary.

Monitor industry trends, take appropriate action to maintain a competitive and profitable operation, including updating beverage lists and menu items as necessary.

Prepare yearly F&B budget, CAPEX projects, and monitor department performance accordingly.

Maintain consistent communication with vendors and suppliers for timely rollout of seasonal food options.

Participate in monthly, quarterly, and annual inventories; prepare and submit inventory reports to accounting in a timely manner.

Develop and implement creative strategies for revenue enhancements and cost containment.

Collaborate with the culinary team in the creation of menu design to attract predetermined customer market.

Consult with the Sales team and banquet team on an ongoing basis, as well as with other departments as necessary.

Manage the payroll and time & attendance for the F&B staff.

Implement effective cost control of food, beverage, and labor costs among departments.

Update and enforce Food & Beverage policies, procedures, and work orders, ensuring adherence to Sonesta’s Brand Standards.

Oversee vendor relationships to ensure quality, timely delivery, and cost-effectiveness.

Lead and coach the team towards achieving exceptional guest service and staff satisfaction results.

Continuously evaluate the performance and encourage improvement of the staff members in the food and beverage department.

Arrange, provide, and supervise training of new staff members to include familiarization of property, standard operating procedures, and food & beverage policies.

Uphold safety, health, and sanitation policies, including those related to HIOSH & OSHA.

Execute projects as directed by the General Manager and Regional Director of Food & Beverage.

Fill in where needed to ensure guest service standards and efficient operations.

Ensure that guests feel welcomed and comfortable in all F&B outlets including the Restaurant, Lounge, in-room dining service, and all places where F&B Services are provided to guests.

Ensure uniform and personal appearance are clean and professional; maintain confidentiality of proprietary information; protect company assets.

Ability to work cohesively with co-workers as part of a team to reach common goals.

Qualifications and Skills:

Ability to create and execute unique food and beverage concepts.

Knowledge of industry trends and techniques.

Demonstrated ability to prioritize guest satisfaction, operational efficiency, and expense control.

Ability to interpret financial and operational data into operational plans.

Excellent budgeting, forecasting, and cost control skills.

Proficiency in communication, including written and verbal skills.

Strong attention to detail and ability to work under pressure while multitasking.

Ability to effectively deal with internal and external customers, some of whom will require high levels of patience, tact, and diplomacy to collect accurate information to resolve conflicts.

Knowledgeable about the basic functions of Windows OS, MS Office, and POS.

Self-driven and able to work independently.

Exceptionally strong in issue resolution and proven analytical skills with a strong attention to detail.

Education and Experience:

Hotel, Restaurant, Culinary, and Service background required.

4+ years of Full-Service Hotel Management and/or Senior Leadership experience preferred.

Must be at least 21 years of age to serve alcohol.

Safe Server Alcohol & Food Handlers certification required.

Ability to provide and maintain a valid driver’s license as the position may require the operation of motorized and electric vehicles.

Bachelor’s degree in business management or related field preferred.

Work Environment:

Must be able to work in a fast-paced environment.

Must be able to tolerate extreme temperatures - i.e., freezers, loading dock.

Physical Demands:

Ability to reach overhead and below the knees, including bending, twisting, pulling, pushing, and stooping. Climb ladders of various heights.

Must be able to push, pull, and lift up to 50 pounds.

Ability to stand for the entire shift.

Expected Hours of Work:

Hours of operation may vary based upon business needs; a flexible schedule including evenings, weekends, and overnight hours is required.

Travel:

Some travel may be required.

Additional Job Information/Anticipated Pay Range:

$133K-144K - Base pay offered may vary depending on various factors including but not limited to job-related knowledge, skills, and job-specific/overall experience.
