Overview
An R&D Pastry Chef plays a crucial role in developing and improving baked goods for large-scale production. This role is typically found in ingredient suppliers (companies like Dawn Foods, and Puratos), food manufacturing companies, contract bakeries, or large industrial bakeries that produce bread, pastries, cakes, and other baked goods for retail, food service, or private label brands.
Responsibilities
- Product development: Create new products like bread, pastries, and cake bases
- Testing: Conduct baking tests, sensory analysis, and process development
- Documentation: Generate reports and documentation like recipes, data sheets, and formulas
- Quality assurance: Ensure samples meet quality assurance criteria
- Lab management: Keep stock of ingredients
- Project support: Assist with project management
- Competitive analysis: Test and compare competitive products
- Documentation maintenance: Ensure R&D documentation is accurate and up to date
Location:
- Must be located within 1-hour driving distance of our corporate office, which is next to FLL airport
Prior Experience:
The ideal candidate should have prior experience in both pastry/baking and food product development in an industrial setting.
- Education: Degree/Diploma in Pastry Arts, Baking Science, Food Science, Culinary Science, or related fields.
- Work Experience: Minimum 3-5 years in bakery production, pastry kitchens, or food R&D roles.
- Industry Experience: Industrial bakery, food manufacturing, or commercial baking operations.
