Pay range: $45k-50k annually, DOE

A combination of professional brewing experience and/or formal brewing education is strongly preferred. Experience running a canning line, preferably a Wild Goose, is absolutely required. This is not an entry level position.

POSITION SUMMARY:

The Packaging Manager-Brewer at DC Brau Brewing, LLC, is part of the DC Brau Production and Management Teams. The Packaging Manager-Brewer is the point person for management of DC Brau’s packaging operations, including the day to day packaging schedule, management of part-time packaging staff, delegation of tasks to full-time brewing staff in rotation on the canning line, and routine maintenance, troubleshooting, and repair of packaging equipment.

In addition to management of packaging operations, Packaging Manager-Brewer will support and rotate through all shift production rolls, including packaging, brewing, and cellar operations. This will include periods of both early and late shifts.

This position reports directly to the Head Brewer and will be required to work in coordination with the brewhouse and cellar, warehouse, marketing and sales, and administrative staff. The Packaging Manager-Brewer may also be required to participate in DC Brau events and promotional activities.

POSITION SPECIFIC DUTIES:

Packaging Manager-Brewer Specific ActivitiesLeads canning runs to oversee equipment set-up, shut down, and conversion procedures and delegate tasks.Manages and schedules part-time packaging staffTrains new hires on canning line operationsCoordinates packaging schedule in cooperation with upper management.Performs inventory of packaging suppliesIndependently executes routine packaging maintenance plan – inspects and lubricates equipment regularly.Troubleshoots and repairs broken / malfunctioning mechanical and electrical equipment.Sets can seamer chuck and roll dimensions. Able to measure and understand double seams.Routinely replaces equipment – tubing, bearings, cylinders, sprockets, etc.Demonstrates knowledge of canning & kegging equipment – able to identify areas for process improvement and develops a plan of action to address.Packaging OperationsPerforms packaging operations - canning and kegging.Restocks de-palletizer during equipment operation.Completes required regular packaging quality checks.Uses shrink-wrapper to safely build pallets for delivery/pick-up.Operates and troubleshoots the automated six-packer, Wild Goose Filler, and Ska Depallitizer.Cleans and fills kegs.Assists with tracking the inventory of necessary packaging materials for canning and kegging.Works to minimize product loss and can dissolved oxygen levels.Starts Up, Shuts Down, and cleans equipment regularly according to brewery SOPs.Converts canning equipment according to brewery SOPs.Operates a forklift truck as needed.Brewhouse OperationsMilling malted barley.Implementing mashing, vorlauf/recirculation, and lautering procedures.Emptying and cleaning of mash tun following brewhouse standard procedure.Overseeing and implementing boiling of wort and hop additions based on provided DC Brau recipes.Sending wort to fermenters.Implementing various CIP cleaning stages and techniques for brewhouse vessels.Ongoing communication with Lead Brewer to ensure seamless brewery scheduling.Reports any equipment or raw ingredient concerns or discrepancies to Head BrewerKeeps work area in compliance with DC Brau’s standards of safety and cleanliness.Reports any safety hazards or concerns to Lead Brewer or Head Brewer.Keeping accurate brewhouse records to ensure consistency in recipe execution using standard DC Brau logs (paper and EKOS record keeping).Cellar OperationsChecking and monitoring of active and non-active fermentations.CIP cleaning techniques (including but not limited to Caustic, acid and sanitary CIP cycles).Have a working knowledge of chemicals used in all cellar operations/ cleaning cycles.Transferring of beer and wort.Harvesting yeast.Dry hopping fermenters.Accurate record keeping in all necessary log books and Brewery software systems.Updating all dry erase boards when updating cellar records.Effectively coordinates with colleagues and among teams to ensure timely availability of product.Operates forklift, pallet jack, and scissor lift in compliance with DC Brau’s standards of safety.Operates centrifuge in a safe and effective manner and in accordance with DC Brau's standard operating procedures. All employees must first demonstrate competency and thorough understanding of all cellar standard operating procedures before commencing with centrifuge training.Other activities/responsibilities as needed.Brewery PromotionRepresents DC Brau and promotes the brewery via external meetings, conferences, presentations, exhibits, and events.

EDUCATION/EXPERIENCE/SKILLS:

Experience in brewing techniques and applications with a minimum of 1-2 years of relevant experience and/or advanced technical training; or the equivalent combination of education and experience, are required. A degree in a related field can be substituted for work experience. Brewing related certification or degree preferred.

Experienced in reading and interpreting documents such as brewery Standard Operating Procedures, DC Brau brewhouse logs, emails, and safety guidelines.Experienced in writing routine brewery related records, logs, and other correspondence.Experienced in speaking effectively before industry peers, customers, and/or employees of the company.Experienced in carrying out instructions furnished in written, oral, or diagram form.Ability to deal with problems involving several concrete variables in standardized situations.Ability to use basic math skills such as addition, subtraction, multiplication, and division.Ability to work with people and groups with diverse backgrounds.

WORK ENVIRONMENT

The noise level in the work environment usually is moderate. Ear protection is available for any employee who desires it.The workspace is not climate controlled. Employees will work in cool to cold temperatures during winter and hot/humid temperatures during summer.Employees may at times be required to work with harmful chemicals and are required to wear protection for skin and eyes and follow all brewery chemical handling procedures.
