Director of Dietary

The Director of Dietary has a direct impact on the profitability of our facility and is also responsible for ensuring that all menu items are carefully prepared and served to our residents according to established health codes.
Supervisory Responsibilities:
Make daily rounds to confirm that food services personnel are performing required duties and to make certain that appropriate food services procedures are being rendered to meet the needs of the facility
Monitor absenteeism to ensure that an adequate number of food services personnel are always on duty and make recommendations to Chief Operations or Human Resource Department to ensure that the dietary department is appropriately staffed
Ensure that food services personnel are trained to use labels and MSDSs to recognize hazards and to follow appropriate protective measures
Monitor dietary personnel to assure that they are following established safety regulations in the use of equipment and supplies
Duties/Responsibilities:
Providing daily food service operations management
Managing inventories
Setting up a department budget and adhering to it
Purchasing supplies and equipment needed for operations
Designing food preparation procedures and standards
Developing dietary plans and other options for clients
Providing financial records and cost reports to Chief Operations or Administrator
Creating a schedule to assist dietary staff and completing a diet history for each resident
Determining menu options, including modified diets, and keeping a record of tried recipes
Conducting periodic surveys through written and personal visits to evaluate the preferences and options of residents
Establishing and maintaining productive lines of communication between dietary services and other facility departments
Develop and maintain a file of approved standard recipes
Inspect food storage rooms, fridges, and freezers for upkeep and supply control
Assist in planning regular and special diet menus as prescribed by the attending physician and develop individual diet plans for residents as needed
Process diet changes and new diets as received from nursing services
Maintain records of the resident’s food preferences and prepare menus accordingly
Ensure that charted food services progress notes are informative and descriptive of the services provided and of the resident’s response to them
Develop and implement an ongoing quality assurance program for the Food Services Department
Create and maintain an atmosphere of warmth, personal interest, and positive emphasis, as well as a calm environment throughout the facility
Monitor to confirm that food services work areas are maintained in a clean and sanitary manner
Maintain an excellent working relationship with other department supervisors and coordinate the dietary program to assure that residents have nutritious and delicious meals
Other duties as assigned
Education and Experience:
High school diploma preferred
Previous supervisory experience preferred
ServeSafe certification
