Job Description
This position is located at the Career, Technology, and Training Center for the Blind and Visually Impaired (CTTC) within the Division of Blind Services in Daytona Beach, FL. The Food Service Director has major duties and responsibilities in the operation of a medium-sized institution/residential rehabilitation facility. The individual in this position is responsible for all aspects of food production including purchasing and preparation, special diets, special activities, bookkeeping and inventory. This individual will also be responsible for all supervisory duties. Attendance is an essential function of this position.
Examples of Work:
Responsible for all aspects of food production including purchasing and preparation, special diets, special activities, bookkeeping and inventory.
Responsible for all supervisory duties, including hiring, scheduling, supervising, and disciplining (4) Food Support Workers to ensure well-balanced and nutritious meals are served each day, up to seven days per week.
Responsible for purchasing and storing as well as the inventory of all food and meal related items and the preparation and serving of 150-160 meals per day.
Maintains records of purchases and inventory.
Planning and review of monthly menus including special diets. Meets weekly with dietitian to ensure provision of special diets as applicable.
Responsible for the maintenance and sanitation of the kitchen facility.
Performs periodic inspections to ensure the food service is at health standards as determined by the county inspectors.
Must be "Serv-Safe" Certified.
Works alongside Food Support Workers and covers prep and serving when they are unable to work their shift.
Works cooperatively with the Residential Services Department providing support to student recreational activities and special events.
Conducts training.
Responsible for the development of inservice training for the food service staff.
Performs other duties as requested/assigned.
Knowledge, Skills, and Abilities:
Knowledge of the principles of supervision and management.
Knowledge of the techniques used in food service planning.
Knowledge of nutritional content of food.
Principles and practices of adequate safety and sanitation in food service.
Ability to plan and direct a food service program which includes purchasing, storage, prep and serving food; developing reports; handling budgetary needs; supervising staff.
Licensure/Registration/Certification Requirements:
Must be “Serv-Safe” certified manager.
