General Description
Colorado Military Academy is seeking applications for a Director of Food & Nutrition Services. Under the general supervision of the Executive Director, this position will be primarily responsible for oversight of all culinary aspects of CMA’s food and nutrition services. This includes menu development, quality control, food cost, hiring and training of kitchen staff, and maintaining safety and sanitation standards for the Mess Hall kitchen. The Director of Food & Nutrition Services will work closely with the Kitchen Manager to ensure efficient preparation and execution of daily breakfast and lunch for students and school staff. This position also works directly with the Colorado Charter School Institute for program guidelines and implementation. This position also works closely with CMA’s Wellness Committee, teachers and students.
The vision of CMA’s Mess Hall is to be a valued school amenity where kids cultivate and nurture healthy eating habits and gain daily access to wholesome, seasonal, and local food that promotes wellness, a sense of place, and participation in environmental protection.
For SY24-25, the Director of Food & Nutrition will create pathways for nutrition education and community action, providing students experiential learning opportunities, ways to provide feedback and be recognized for their participation. This includes preparing and serving healthy, flavorful, sustainable, and nutritious food produced through fiscally responsible and mindful practices that nourish and support our community.
The Director of Food & Nutrition Service at CMA will also align the CMA Mess Hall with campus-wide sustainability efforts and spearhead a ProStart culinary training program for SY2025-2026.
Job Description:
As our Director of Food & Nutrition you will be responsible for the overall vision of CMA’s new self-operational breakfast and lunch program, including all aspects of menu and recipe development, food preparation and serving, staff supervision and training, general nutrition education and ProStart program, integrating Mess Hall happenings into the larger school culture. Develops and promotes good relations among various community members and school departments.
Responsibilities:
Hire, train and develop kitchen staff. Develop a training schedule.
Oversee menu development to meet Colorado Department of Education (CDE) breakfast and lunch nutrition standards while aiming to create a long list of “greatest hits” with CMA students.
Maintain food costs to planned budget.
Maintain all kitchen financial records, including deposits and forms and reports for CDE and the Colorado Charter School Institute. Monitors compliance of all school food service regulatory agencies. Actively pursues upcoming regulatory changes and provides sustainable solutions.
Solicit regular feedback from students, staff and CMA community. Work in cooperation with CMA administration to utilize weekly school bulletin to highlight nutrition education programs and activities, Mess Hall promotions and/or student engagement.
Oversee the sanitation and cleaning of all kitchen facilities, equipment and areas. Maintain the security of the unit. Follow safe/acceptable food preparation practices.
Responsible for production management to ensure regulatory compliance, correct serving size, minimal waste and theft control. Tracking meal participation rates.
Deliver safety and HACCP training to all kitchen personnel; monitor safety and HACCP practices.
Perform other related duties as assigned or requested.
ESSENTIAL PHYSICAL REQUIREMENTS:
Frequently required to move, stoop, kneel, crouch, and have fine motor skills including reaching, handling, and fingering.
Must have good depth perception, color vision and field of vision.
Tasting and smelling within normal range.
The employee must occasionally lift and/or move up to 50 pounds, frequently lift and/or move up to 20 lbs and constantly lift and/or move up to 10 lbs.
In this position employees will have exposure to extreme cold and extreme heat.
Required Qualifications/Certifications:
Servsafe Food Handler
High School or equivalent education
ProStart Teacher training, or able to complete training in the first 6 months of employment
Desirable Certifications:
Experience working in a school environment
Servsafe Manager
Servsafe Allergen
Culinary school certificate or degree
Nutrition education at a Bachelor’s level or higher
