At Tacodeli, our Commissary Executive Chef leads the culinary operations of our commissary kitchen, ensuring the production of high-quality, scratch-made food that embodies our commitment to excellence. This role encompasses menu development, team leadership, cost management, and strict adherence to health and safety regulations. In our high-volume environment, the Executive Chef plays a pivotal role in maintaining the standards that have defined Tacodeli since 1999.

The Tacodeli Commissary Executive Chef will oversee all culinary operations within the commissary kitchen, ensuring the production of high-quality food every day that meets Tacodeli standards.  We are a high-volume scratch kitchen environment where food quality matters.  This role will not only lead the entire commissary, they will also oversee the driver team, ensuring the timely and accurate execution of Wholesale B2B deliveries while maintaining exceptional customer service standards. 

What You’ll Be Doing

Specific responsibilities include, but are not limited to:

  • Leadership.  Recruit, train, and supervise kitchen staff, fostering a positive work environment and ensuring high performance.  Ensure accountability to strong adherence of health and safety regulations. 
  • Quality Assurance.  Maintain consistent food quality and presentation standards across all products, conducting regular line checks and audits, and implementing improvements as needed. 
  • Cost Control.  Manage the commissary budget, monitor food and labor costs, and implement strategies to optimize efficiency without compromising quality. 
  • Health & Safety Compliance.  Ensure the commissary operates in compliance with all health and safety regulations, maintaining a clean and safe working environment. 
  • Vendor Relations.  Establish and maintain relationships with suppliers, ensuring appropriate quality standards. 
  • Operational Efficiency.  Develop and implement standard operating procedures to enhance kitchen operations and productivity. 
  • Administrative Duties.  Invoicing, accounting, leading people, scheduling and more!
