EUROPEAN PASTRY & DESSERT SPECIALTY CHEF SOUGHT BY ITHAKI II RESTAURANT & BISTRO INC., DBA OUR PLACE KITCHEN & BAR AT PEABODY, MA WORKSITE. DUTIES INCLUDE: DIRECT AND PREPARE EUROPEAN STYLE PASTRIES AND DESSERTS FOR RESTAURANT; IMPROVISE NEW ITEMS ON MENU ACCORDING TO DEMANDS AND TASTE OF CLIENTS; PREPARE RAW MATERIALS TOWARDS THE PREPARATION OF DISHES, INCLUDING THE SEASONING OF MEATS, VEGATABLES, SAUCES, AND OTHER APPLICABLE FOOD MATERIALS; MANAGE OVERALL COOKING STAFF IN RESTAURANT; COORDINATE KITCHEN ACTIVITIES WITH WAITERING AND MANAGEMENT SECTIONS; MAINTAIN AND SUPERVISE OVERALL FOOD INVENTORIES IN KITCHEN FUNCTION OF RESTAURANT; PROVIDE CONSULTATION ON EXOTIC EUROPEAN DESSERTS AND/OR PASTRIES TO RESTAURANT CLIENTELE. MINIMUM REQUIREMENTS & CREDENTIALS CURRENTLY INCL: MUST HAVE 2 YEARS EXPERIENCE AS EUROPEAN DESSERT AND PASTRY SPECIALTY CHEF, OR 2 YEARS EXPERIENCE IN ANY RELATED POSITION PROVIDING PROFICIENCIES IN THE FOLLOWING AREAS: (1) MUST HAVE WORKING KNOWLEDGE OF THE EUROPEAN STYLE OF EUROPEAN DESSERTS & PASTRIES; (2) MUST HAVE WORKING PROFICIENCY IN THE USAGE OF DESSERT & PASTRY SPECIFIC KITCHEN UTENSILS AND TOOLS, SUCH AS LATICE/PASTRY CUTTERS, FRENCH TAPERED ROLLING PINS, ZESTERS/GRATERS, WHISKS, BLENDERS, MIXERS, SIFTERS, SPRINGFORM PANS, DUSTING WANTS; (3) MUST HAVE WORKING KNOWLEDGE OF THE EUROPEAN BAKING STYLES, SUGAR CONTENTS, BLENDING OF FRUITS, HERBS AND VEGETABLES INTO DESSERTS AND/OR PASTRIES; (4) MUST BE PROFICIENT IN THE IMPROVISION OF NEW EUROPEAN STYLE DESSERTS AND/OR PASTRIES.
