Job Title: Senior Scientist / Principal Scientist – Beer Brewing and Alternative Grains Innovation Position Overview: The Senior Scientist or Principal Scientist will lead groundbreaking research and development in beer brewing , with a specific focus on using alternative grains and plant-based biomaterials. This role demands extensive hands-on expertise in beer brewing , from wort production to process scaling, and a deep understanding of the science behind brewing processes. The ideal candidate will take ownership of bench-to-production-scale projects, including process optimization, raw material characterization, and flavor development for both alcoholic and alcohol-free beers. This individual will be a proactive leader, detail-oriented, and results-driven, with the technical expertise and creativity required to advance Steuben’s brewing and innovation initiatives. Key Responsibilities: Beer Brewing Expertise: Lead and oversee the development of beer brewing processes, from wort production to finished product, ensuring high-quality outcomes at all stages. Process Optimization: Drive scaling of brewing operations, troubleshooting and refining processes for consistent production quality. Material Characterization: Analyze and optimize the functionality and sensory attributes of raw grains, wort, and finished beer products, with a focus on alternative grains. Flavor Innovation: Develop and optimize flavor profiles for both alcoholic and alcohol-free beers, ensuring superior taste and market differentiation. Cross-Functional Collaboration: Partner with regulatory, R&D, and business development teams to ensure compliance, feasibility, and market readiness. Regulatory and Safety Compliance: Maintain up-to-date knowledge of food safety protocols, brewing regulations, and labeling requirements, ensuring all products meet or exceed industry standards. Leadership and Teamwork: Serve as a technical leader within the team, providing mentorship to junior staff and ensuring seamless project execution. Education and Experience Requirements: Master’s or Ph.D. in Food Science, Grain Science, Brewing Science, Chemical Engineering, Biological Sciences, or a related field. Minimum of 5 years of hands-on experience in beer brewing , including wort production, fermentation, and finishing processes, in academic or industrial settings. Proven expertise in scaling brewing processes from lab to production. Extensive knowledge of grain science, ingredient functionality, and their application in beer and alcohol-free beer products. Strong understanding of UHT processing and its implications in brewing. Demonstrated ability to plan and execute complex R&D projects with minimal supervision. Technical Skills: Proficiency in wet chemistry techniques specific to brewing. Hands-on experience with pilot-scale brewing equipment and production systems. Advanced knowledge of analytical methods for characterizing wort, grains, and beer products, including sensory evaluation techniques. Additional Qualifications: Up-to-date knowledge of brewing regulations, food safety, and labeling laws. Exceptional problem-solving, organizational, and project management skills. Flexibility to adapt to new responsibilities and challenges in a fast-paced environment. Some travel required to attend trade shows and support business development efforts. Physical Requirements: Ability to lift up to 20 pounds when required. Standing for extended periods during lab and pilot plant activities. Why Join Us?
