General Responsibilities Include:

Ensuring profitability of the Food and Beverage department, maximizing revenue and controlling costs.

Work cohesively with the Executive Chef and departmental managers to create revenue opportunities through ongoing activations, menu enhancements, and refreshed concepts.

Collaborate with property Director of Sales on marketing, events, and catering opportunities to grow income streams.

Maintain and improve food and beverage service standards with the objective of consistently meeting and exceeding guest expectations.

Lead departmental managers in overseeing staff training and development, coaching, and counseling when there is a need with Human Resources.

Constantly monitor guest survey feedback relative to guest satisfaction with food and beverage offerings to maintain the highest level of guest satisfaction, reviewing results with colleagues to develop appropriate corrective action and ensure implementation.

Complete menu analysis to remain market-relevant and profit-driven at all times.

Monitor and analyze the activities and trends of competitive restaurants, bars, and other hotel banqueting departments to drive profitability within the hotel’s outlets.

Handle all guest complaints, requests, and inquiries relative to food and beverage service in the various restaurants.

Conduct monthly food and beverage meetings and daily briefings with outlet managers and supervisors.

Identify and develop talents within the departmental colleagues for future potential growth opportunities.

Lead by example with respect to the Viceroy Ideology, Values, Brand Standards, and champion appearance and hygiene guidelines.

Perform other job duties and projects as directed.

Knowledge of food and beverage operations and health and safety standards.

Physical Requirements:

Must be able to walk and stand for up to four (4) or more hours in length. Position requires walking and giving direction most of the working day.

Must be able to bend, stoop, squat, and stretch.

Must be able to occasionally lift items up to 15lbs on a regular and continuous basis.

Requires grasping, standing, sitting, walking, repetitive motions, listening and hearing ability, and visual acuity.

Talking and listening occur continuously in the process of communicating with guests, supervisors, and subordinates.

Qualification Standards:

Excellent knowledge of computer accounting programs, P&L proficiency, and analytical skills are required.

Bachelor’s Degree or equivalent preferred.

Experience in a luxury/lifestyle hotel/resort background required.

A minimum of 5 years’ experience as Director of Food and Beverage in a similar size scope/operation.

Nightlife, lifestyle, or luxury brand experience preferred.
