Food & Beverage DirectorSUMMARY:Assist the Food and Beverage Director to ensure that all products meet Ruttger’s quality standards. Responsible for providing a dining experience that exceeds guest expectations. Responsible for the set-up, maintenance, and operation of the restaurant in the absence of the Food and Beverage Director.EDUCATION and/or EXPERIENCE:Must be at least 18 years old.Post-secondary hospitality management training highly desirable.Minimum of two (2) years’ previous serving experience required.Minimum of one (1) year experience in a supervisory position recommended.ESSENTIAL DUTIES:Assist as directed to oversee front of house operations in the absence of the Food & Beverage Director.Maintain dining reservation system and assist with updating and maintaining Silverware POS system.Attend weekly stand up and precon meetings.Assist the Food and Beverage Director with placing orders for beverages and necessary restaurant supplies.Estimate the amount of all non-alcoholic beverages needed and assist with placing the order with suppliers; check accuracy and quality of deliveries.Supervise server activities, monitor steps of service and serving methods.Assist with overseeing Front of House operations. Resolve customer complaints about food quality and/or service.Ensure that proper cash handling procedures are followed.Assist the Food and Beverage Director & Events Manager on banquet events.Assign and ensure completeness of all pre-shift and post-shift duties.Ensure the morning and evening buffets are set up timely.Ensure buffet units are cleaned after each use.Assist with cleaning of the restaurant areas to maintain sanitation standards.Monitor actions of staff and guests to ensure health and safety standards and liquor laws are followed.Ensure proper security procedures are followed to protect employees, guests and restaurant assets.Keep Food & Beverage Director informed of all issues and take prompt corrective action where necessary.Foster positive working relationships and communication with all departments.Assist with monthly inventory.Assist with the restaurant's weekly Schedule.Receive and deliver food and/or drink orders from guests or servers.Greet guests and inform them of specials, menu items, and any menu changes.Process guest orders to ensure that all items are prepared properly and in a timely basis.Ring food and beverage orders into POS system, process cash and credit card transactions.If necessary, present, open, and pour wine for guests.Ensure guests are satisfied with food and service, respond to additional requests.Present bill and collect payment.Perform all assigned pre-shift and post-shift duties.Stock workstations, bus and turn over tables.Maintain a clean and sanitary workstation.Complete daily and weekly cleaning duties.Ensure good safety practices.Any and all other duties as assigned.EXPECTATIONS:The employee must be able to perform each essential duty satisfactorily.
