annuallyResponsibilities and Duties:* Select, train, supervise and monitor performance of Catering staff in the proper preparationof Banquet menus, memos, and files. Organize and conduct staff meeting to coordinatesuccessful functions* Tour and inspect banquet and meeting space on a daily basis, report necessary repairs.* Schedule and assign in detail, specific duties to all employees under supervision for theefficient operation of the Catering Department, coverage of functions in accordance withproductivity standards.* Solicit new accounts and review previous Banquet files to generate business. Overseeservice of group functions once they are in house.* Write Banquet menus, memos, and send out Red Boarders for VIP Guests. Review and reviseCatering Department guarantee sheets, weekly events sheets. Formulate and make revisionsto annual and monthly forecasts.* Negotiate, prepare and write contracts and enter information into the Diary Book.* Interact with clients to determine needs and direct staff accordingly. Respond to telephoneand walk-in inquiries of potential guests.* Maintains vacation schedule for proper staffing.* Performs other duties as requested.* Attend menu, staff, and other Hotel meetings.Specific Job Knowledge and Skills:The individual must possess the following knowledge, skills and abilities and be able to explain anddemonstrate that he or she can perform the essential functions of the job, with or without reasonableaccommodation.* Thorough knowledge of food and beverage products, proper preparation and presentation of foodsand beverage items.* Ability to prepare signage for catering functions.* Ability to grasp, lift and/or carry, or otherwise move goods weighing a maximum of 20 lbs. on anoccasional basis.* Ability to read, write and speak on order to comprehend and communicate job functions.Date Revised: September 21, 2020* Ability to create special themes and menus.* Ability to effectively deal with internal and external customers, some of whom will require highlevels of patience, tact and diplomacy to defuse anger, collect accurate information and resolveconflicts.Other Expectations:* Regular attendance in conformance with the standards, which may be established from time to time,is essential to the successful performance of this position.* Due to the cyclical nature of the hospitality industry, associates may be required to work varyingschedules to reflect the business needs of the hotel. This includes nights, weekends and/or holidays.* All employees must maintain a neat, clean and well-groomed appearance (specific standardsavailable).* Employee is always required to take on the responsibility and wear appropriate PersonalProtective Equipment (PPE) as determined by position and duties.* Complies with health and safety rules, regulations and procedures to maintain a safe environmentGather, organize and disseminate both written and verbal information regarding the specific requirements of client's events to the appropriate departments and individual clients in a prompt, accurate, profitable, pleasant, and professional manner.Attend BEO and Staff Meetings to review any changes in upcoming events.Communicate with sales, front office and reservations in order to coordinate and monitor guest room blocks and special reservation needs. Assign banquet/meeting rooms set up based on needs of clients, e.g. schoolroom. Review banquet personnel work to ensure accuracy. Monitor in house group activity assisting as needed such as organizing exhibit set up.* Establish rapport with and entertain meeting planners while promoting hotel facilities and services.
