Quadram Institute, Jackson, Mississippi, United States,

Hours per week: 37Project Title: The impact of an innovative freeze-dried fermented coconut-based ingredient on the gut microbiota - microbial metabolites, gut bacterial composition and survival of probiotic lactobacilliExpected/Ideal Start Date: 18 Nov 2024Months Duration: 6Interview Date: 01 Nov 2024Job Description

Main Purpose of the Job

We are looking to hire a Research Scientist to work on a recently awarded BBSRC grant through the RIPEN hub in collaboration with a food company, Fermenti Foods. This exciting collaborative project will involve testing the pre-and probiotic potential of novel fermented food products developed by Fermenti Foods in advanced in vitro simulations of the human digestive tract and microbial environment available at Quadram. The project aims to understand the survival of the probiotic bacteria in a food matrix through the GI tract, and the implications of these probiotics in combination with prebiotic fibres on the microbial community of the gut and metabolic consequences.Key activities will involve testing novel fermented fibre formulations in conjunction with the start-up company. This will involve carrying out in vitro digestions using INFOGEST 2.0 and model gut fermentations of the formulations and analysing the impact on the gut microbiome through metagenomic analysis of microbial communities, metabolomics, and analysis of volatile metabolites. The analysis will be supported by the sequencing, metabolomics, and bioinformatics platforms available at Quadram Institute.Key Relationships

The position will report to Dr Fred Warren who will be the project coordinator at Quadram. The post holder will also need to work closely with other researchers within the Warren Group, as well as other teams in the Institute including core sequencing, bioinformatics, and metabolomics. Externally, the post holder will need to be in regular contact with representatives from the industrial partner, food technologists, and the funder, RIPEN hub, to update on progress and coordinate research.Main Activities & Responsibilities
