Proper Hospitality is seeking an Assistant Director of Food & Beverage to join the team at Shelborne Miami Beach by Proper, a renowned hotel re-opening and debuting in our portfolio in early 2025.

Our property will introduce four vibrant new food & beverage destinations to the neighborhood, each suited for warm weather dining, with an all-day signature restaurant, a lobby bar-lounge, and curated cafe. Resort amenities will include a spacious pool and lush garden lounge, indoor-outdoor cabanas, sundeck terrace, state-of-the-art fitness center, dedicated access to a private beach club, and more than 15,000 square feet of indoor-outdoor meeting & event space.

The Assistant Director of Food & Beverage will be a key leader in overseeing the day-to-day operations and management of all food and beverage outlets within the hotel, including the restaurants, bar, in-room dining and special events. This role ensures the highest level of guest satisfaction by providing exceptional service, maintaining standards of quality and driving innovation in culinary offerings. The ideal candidate will possess a deep passion for hospitality, a strong attention to detail and the ability to inspire and manage a team in a fast-paced, luxury environment.

Key Responsibilities:

  • Assist the Director of Food & Beverage in the overall management and execution of all F&B outlets
  • Oversee daily operations, ensuring seamless coordination between the kitchen, service staff and event planning teams
  • Maintain the highest levels of guest satisfaction by enforcing luxury service standards, ensuring that every guest interaction is personalized, professional and exceeds expectations
  • Support in the creation and implementation of innovative menus, seasonal promotions and special events that enhance Shelborne Miami Beach’s F&B offerings
  • Collaborate with the culinary team to ensure menu consistency, quality control and cost management
  • Manage and monitor budgets, labor costs, food costs and inventory to maximize profitability while maintaining product quality and service standards
  • Assist in hiring, training and mentoring F&B staff, fostering a positive, team-oriented environment focused on delivering exceptional guest experiences
  • Ensure all F&B operations comply with local health and safety regulations, maintain high hygiene standards and uphold sustainability practices
  • Assist with guest feedback and resolve any service issues promptly and professionally
  • Contribute to developing marketing initiatives for F&B outlets, including partnerships, social media collaborations and brand events
  • Attend and assist in leading F&B management meetings, contributing insights, ideas and action plans to enhance the guest experience

Qualifications:

  • Bachelor’s degree in hospitality management, culinary arts or a related field preferred
  • Minimum 5 years of food and beverage management experience in a luxury or boutique hotel setting
  • Proven track record in leadership roles within high-end dining establishments or hotels
  • Strong financial acumen, with experience managing F&B budgets, controlling costs and maximizing profitability
  • Excellent communication and interpersonal skills, with the ability to inspire, train and lead a team
  • Passion for delivering exceptional guest service and creating memorable dining experiences
  • Ability to work in a fast-paced environment, handling multiple tasks and leading teams under pressure
  • In-depth knowledge of food and beverage operations, including menu development, kitchen operations and service protocols
  • Familiarity with local and international food trends, as well as an understanding of luxury service standards
  • Flexible schedule, including weekends, holidays, and evenings as needed
