Job SummaryAs a Director – Food & Beverage, you will be responsible for directing, coordinating, and overseeing the day-to-day Food and Beverage operations, personnel, customer service, fiscal management, and administration.

Duties And Responsibilities

Foster an environment that embodies Bally’s Born to Entertain philosophy by creating a fun-filled, entertaining atmosphere.

Enthusiastically promote Bally’s customer-centric culture of offering superior guest service and actively building long-lasting guest relations.

Adhere to policies and procedures in accordance with regulatory requirements, Company initiatives, and organizational goals.

Manage, direct, and supervise all personnel assigned to Food and Beverage operations.

Schedule staffing to appropriate levels within all areas of Food and Beverage.

Consistently review and maintain costs within projected levels.

Create, monitor, and maintain a cash control system.

Maintain discussions with the marketing department to determine when special events will be taking place in order to be appropriately staffed.

Coordinate and execute catering and special event functions.

Ensure that all team members within the food and beverage department are properly trained in the performance of their job duties.

Mentor, motivate, and support the Food and Beverage team to ensure development of the team.

Establish and maintain effective and efficient department procedures and controls and ensure adherence to same by all team members.

Prepare annual budgets, operating forecasts, and other required department reports.

Ensure that all outlets within the Food and Beverage operation are scheduled for appropriate coverage during peak hours.

Establish and maintain contact with vendors and Food and Beverage customers.

Supervise and work closely with Food and Beverage managers, supervisors, and team members.

Inspect food and beverage outlets, kitchen operations, and catering operations to ensure compliance with company and departmental policies and procedures.

Review usage, guest counts, and revenue reports to determine appropriate staffing.

Perform other duties as assigned.

Qualifications

Must be 21 years or older.

4 Year Degree in Hospitality Management or related field.

4+ years experience as department leader in high volume Food and Beverage operations.

8 to 10 years Food and Beverage management experience.

Culinary experience a plus.

Experience in a Multi-Outlet facility or Casino.

Point of Sales system experience.

Ability to forecast and maintain the departmental budget.

Excellent communication skills, both written and oral.

Ability to obtain and maintain all necessary licensing.

Must be able to work weekends, weeknights, and holidays.

Physical Demands

Regularly required to walk, stand, see, talk, and hear.

Must be able to stand for long periods of time.

Must occasionally lift and/or move up to 30 pounds.

Able to work with others while maintaining a positive and professional demeanor.

Work EnvironmentThe work environment is fast-paced and contains bright lights, loud noise, and stressful situations.
