The Dry Dock is making a comeback in Portland’s vibrant Old Port, and we’re looking for a passionate and dynamic Restaurant Manager to join our team! With a planned reopening in summer 2025, this beloved waterfront spot operated by the Luke’s Lobster team will be revitalized under the leadership of Chef Matt Ginn, who will be taking the helm as General Manager. The Role
Restaurant Manager – Dry Dock | Portland, Maine
Compensation & Benefits
- Salary: $60,000 - $70,000 + competitive bonus program

Who We’re Looking For
We’re seeking a Restaurant Manager who is excited to be part of a brand-new opening! Ideal candidates will have experience with new restaurant launches and are eager to help shape a high-volume, multi-floor restaurant with expansive outdoor decks and a full beverage and raw bar program. We’re looking for someone with a balanced approach to maintaining high service standards while managing a busy front-of-house. Duties & Responsibilities
We offer delicious, high-quality seafood that our guests love. To make that happen you’ll be:
- Building, leading and developing a dynamic and diverse team
- Ensuring our guests have an amazing dining experience
- Assisting the General Manager in the daily operations of the restaurant
- Analyzing sales and controlling expenses, payroll and inventory
- Utilizing your exceptional attention to detail, safety, cleanliness and organization
Qualifications
- Two years restaurant manager experience (preferred)
- Expertise in hiring, training, and leading a front-of-house team (required)
- Experience balancing schedules, sections, and support staff (required)
- Flexible schedule to accommodate a dynamic new restaurant opening (required)
- Strong financial acumen, including an understanding of P&Ls and COGs (preferred)
- Required food handler certification (preferred)
- Ability to handle shellfish / tolerate exposure to shellfish allergen (required)
About the Dry Dock
Originally opened in 1983 and closed in 2018, the Dry Dock is a two-story restaurant facing the waterfront that will re-open with an expanded deck and renovated interiors this summer. The Luke’s Lobster team will operate the restaurant located at 84 Commercial Street, just down the street from their first Maine location on Portland Pier.
The Dry Dock will feature high quality, and responsibly sourced seafood including a premier raw bar in a warm, inviting atmosphere, with a full beverage program, intended for both visitors and locals alike.
Luke’s Lobster was founded in 2009 by Maine native and third-generation lobsterman, Luke Holden, to bring the quality lobster rolls of his youth to NYC. A certified B Corp, Luke’s now has over 25 locations across the US, locations in Japan and Singapore, and can be found in grocery stores nationwide.
