The Sheraton Greensboro/Joseph S. Koury Convention Center is now seeking a professional Sous Chef for its high volume banquet kitchen. This is a great culinary opportunity at the largest hotel and convention center in the Southeast region This position will: Lead the Banquet Culinary Staff in high volume meal preparation Assist the Executive Chef in managing all aspects of the kitchen in a friendly, open-minded manner. A very strong emphasis on monitoring and maintaining the highest standards of health, sanitation and cleanliness within all areas of the kitchen daily. Currently certified in Serve-Safe food management. Assist with development of menu strategies. Monitor quality and presentation, following and assisting in creating AMAZING food. Work alongside the line associates to ensure a seamless event on a day-to-day basis – Extensive knowledge of day-to-day details of all culinary operations. Report directly to the Executive Chef. Manage and maintain cleanliness and proper rotation of all food product in coolers and dry shelves The ideal candidate will have 5 years of high-volume Sous Chef experience. Must be able to execute high-quality, high-volume food production consistently with an emphasis on presentation. Should be able to teach and train staff to prepare and present with the highest of standards when the Executive Chef is both present and off. Job requires attention to detail, ongoing innovative staff training, creativity, food cost control, and organizational skills.
