Position Overview:

The Director of Food and Beverage is responsible for managing and overseeing all aspects of the administration and daily operations of the Food and Beverage department. The Director of Food and Beverage will perform all duties within the guidelines of the Mount Airy Casino Resorts policies and procedures, Internal Control Standards and objectives.

Essential Job Functions:

Responsible for directing and supervising Executive Chef, Banquet Manager, Day/Night Life Manager, Food and Beverage Outlets Manager, Beverage Manager, Office Administrator and all Food and Beverage employees.

Ability to issue complimentaries in accordance with the approved comp matrix.

Recommends restaurant opening and closing times, new venue ideas and staffing levels.

Monitor the budget to ensure that the department runs efficiently to achieve established fiscal and performance goals.

Conduct regular cover count, check average, food and beverage costs and projection analysis to maximize profitability.

Assist in the development and implementation of the Food and Beverage Policies and Procedures. Develop departmental procedure manuals and ensure proper documentation and storage of all relevant materials.

Responsible for the development and implementation of training programs for all areas of the Food and Beverage department.

Oversee effective recruitment, hiring, training, recognition, coaching, terminations and other personnel related issues.

Establish management objectives, evaluate employee performance and provide feedback to ensure that objectives are met.

Communicate regularly with managers and keep them informed on all casino and Food and Beverage activities and events. Communicate regularly with employees and keep them informed on all casino activities and events.

Ensure proper staffing levels and work schedules to provide a high level of service with minimum labor hours.

Responsible for settling all disputes with customers, employees and supervisors.

Cooperate with the Pennsylvania Gaming Commission to ensure proper compliance with all rules and regulations of the Pennsylvania Gaming Commission.

Provide exceptional customer service to all patrons and communicate in a pleasant, friendly and professional manner at all times. Maintain a professional work environment with supervisors and staff.

Meet the attendance guidelines of the job and adhere to regulatory, departmental and company policies.

Attend all necessary training meetings.

Assist in other projects, as directed.

Duties, responsibilities, requirements and expectations pertaining to this job are subject to change as needed. Hours are determined by a 24 hour schedule.

Education/Experience:

Must be a minimum of 18 years of age or older upon employment.

Post Secondary education in a related field.

Previous customer service experience preferred.

6 years in the field of food and beverage.

Minimum of 5 years of management experience.

Must be able to evaluate statistical reports and other business reports.

Knowledge of all phases of Food and Beverage administration, cost control, and familiarity with all beverage services is required.

Excellent interpersonal, customer service, communication, coaching, team building and problem-solving skills.

Language Skills and Reasoning Ability:

Ability to write routine correspondence and to speak effectively to the public, employees and customers.

Must possess excellent communication skills.

Must have the ability to deal effectively and interact well with the customers and employees.

Must have the ability to resolve problems/conflicts in a diplomatic and tactful manner.

Maintain physical stamina and proper mental attitude to work under pressure in a fast-paced, casino environment and effectively deal with customers, management, employees, and members of the business community in all situations.

When on the casino floor, the noise levels increase to loud.

Must be able to stand, walk and move through all areas of the property.

Must be able to work nights, weekends and holidays.

Maintain physical stamina and proper mental attitude to work under pressure in a fast-paced, noisy casino environment and effectively deal with guests, management and employees in all situations.

Other Skills/Abilities:

Must be able to be approved for and maintain a PA Gaming license.

Must be able to read, write, speak and understand English. Must be able to respond to visual and aural cues.

Work nights, weekends and holidays as required.
